Chocolate Carrageen Mousse

As Valentine’s Day is approaching, today I am going to make a lovely light healthy Carrageen Moss Mousse  with chocolate and orange.    I am a great believer in using only a few ingredients in my recipes and, I mostly use ingredients that people would have in their pantryl also try to make sure that the recipes can be made relatively quickly as I know myself if I saw a massive list of ingredients it would put me off trying to make the recipe!

 

This delicious healthy mousse is lovely on it’s own or with lemon or vanilla.   If you like you can add chocolate to the mousse, which I did for the healthy cheesecake.    The base for the cheesecake is made with a soft figs,mixed nuts and vanilla extract.   These three ingredients are processed in the food processor for around 4-5 minutes. 

Figs are low in calories and contain soluble dietary fiber, minerals, vitamins, and pigment antioxidants that contribute immensely towards  health and wellness.

For the cheesecake I spread a little blackcurrant and Dillisk jam between the base and the mousse and I decorated the top with orange shavings and Berries.

Carrageen Moss is the main ingredient in this recipe for the Mousse.  It is a fantastic remedy for chest and throat problems and is also a natural thickener and, in this recipe this is what sets the mousse.   Carrageen can also be used to set the jam which I spread between the base of figs and mixed nuts and the Chocolate Mousse.

In my recipe today I am using Cacao powder as an alternative to chocolate, in most of my recipes I would use Cacao powder as a healthy alternative to chocolate.

Here is the recipe for today’s Chocolate Carrageen Mousse.

700 mls of full fat milk                                           9 g of Carrageen Moss 

2 dessert spoons castor sugar                               orange rind

1 teaspoon of vanilla bean paste

I have also added 1 dessert spoon of Cacao powder

Firstly rehydrate the Carrageen Moss in tepid water for 15 minutes.  While it is steeping in the water you can add to your pot the milk, vanilla extract, grated orange rind and 1 desert spoon of sugar.

  1. Strain the Carrageen Moss and add the actual Moss to the pot.  Bring this mixture to the boil then simmer on a relatively low heat for 30 minutes.
  2. Meanwhile separate two eggs.  With the egg yolks mix the other desert spoon of sugar and whisk.
  3. Strain the Carrageen Moss mixture through a sieve into this egg mixture and mix with the mixer.  Also at this point you can add 1 desert spoon or Cacao powder if and orange rind you are using it. 
  4. Whip up the egg whites and add to egg and Carrageen mix, folding it gently with a spoon in a figure of eight.
  5.  Leave to set in fridge for 2 hours or alternatively overnight. Will stay good for 2/3 days.
